Update 8.13.2009: Almost a week since brewday and the fermentation is still nice and strong. Missed target OG buy some, but that is fine, it will still be a nice brew. I have to say I need to invest an a very large hop bag for this amount of hops. The 2.75oz of home grown cascade soaked up so much wort that I didnt think I was going to have remotely 5 gallons. I will start dry hopping this one in a week or so or whenever fermentation subsides.
Update 9.2.2009: Kegged and carbed up the beer last night. Took a final gravity reading of 1.020, which was a bit sweet but I will take it. I get more hop flavor than I do bitterness and I dont know if that was due to the gypsum I put in or the combination of hops. Honestly it tasted better than I thought it would. So if it actually carbs up and turns out good, I will have to do this one again.
Update 10.21.2009: Beer is way to sweet for my taste. See my 2IPA Redux for the next batch. Should be much lower in FG and have a nice hop crispness. As for this one, it's a Hop Bomb, which is what I was expecting, just finished too sweet.

Update 8.13.2009: This one is a big question mark for me. We will see in a few weeks how it turns out. Right now it seems to be slowly fermenting in a fridge, which at 1st I thought it was infected but now I am pretty sure its not. I will know more in a few weeks.
Update 10.4.2009: Oktoberfest is bottled and keged. Should be ready to go in a week or so.
Update 10.21.2009: This is a great beer, which I will do again. I think I will brew it in March and let it lager till September to get a more clear crisp beer. Other than some haze the beer is awesome.
