2 New Brews 2IPA & Oktoberfest

Long time no brew. Seriously it's been over a month since I last brewed, what is wrong with me? I am going to make up for the lack of brewing with a double brew day. I will be brewing with 2 friends of mine this Friday afternoon. We will be doing a Double IPA and an Oktoberfest. Two totally different beers but I am sure they will turn out well. This will be my 1st foray into brewing a lager and since it will be in a friends fridge to ferment I am sure it will turn out awesome in a few months. Here is the recipes.

2IPA

Malt:
12 lbs: American 2-Row
3 lbs: Belgian Pils
3 lbs: Honey (added with 10min left in the boil)
1 lb: Crystal 10L
.5 lb: Cara-Pils

Hops:
1.o oz: Magnum 15.1%aa 60min
1.0 oz: Cascade 8.2%aa 30min
1.0 oz: Simcoe 14%aa 30min
1.0 oz: Amarillo 7.5%aa 20min
1.0 oz: Cascade 8.2%aa 20min
.50 oz: Columbus 14.2%aa 20min
1.0 oz: Amarillo 7.5%aa 15min
1.0 oz: Cascade 8.2%aa 15min
.50 oz: Columbus 14.2%aa 15min
1.0 oz: Amarillo 7.5%aa 10min
1.0 oz: Cascade 8.2%aa 10min
.50 oz: Columbus 14.2%aa 10min
1.0 oz: Simcoe 14%aa 5min
2.75 oz: Cascade ??%aa 1min (Homegrown)
1.0 oz: Amarillo DH
1.0 oz: Cascade DH
.75 oz: Centennial DH

Yeast:
Wyeast American Ale II (1272)

Update 8.13.2009: Almost a week since brewday and the fermentation is still nice and strong. Missed target OG buy some, but that is fine, it will still be a nice brew. I have to say I need to invest an a very large hop bag for this amount of hops. The 2.75oz of home grown cascade soaked up so much wort that I didnt think I was going to have remotely 5 gallons. I will start dry hopping this one in a week or so or whenever fermentation subsides.

Update 9.2.2009: Kegged and carbed up the beer last night. Took a final gravity reading of 1.020, which was a bit sweet but I will take it. I get more hop flavor than I do bitterness and I dont know if that was due to the gypsum I put in or the combination of hops. Honestly it tasted better than I thought it would. So if it actually carbs up and turns out good, I will have to do this one again.

Update 10.21.2009: Beer is way to sweet for my taste. See my 2IPA Redux for the next batch. Should be much lower in FG and have a nice hop crispness. As for this one, it's a Hop Bomb, which is what I was expecting, just finished too sweet.

Oh Oh Ofest (Oktoberfest)

Malt:
5 lbs: German Two-Row Pils
3.5 lbs: German Munich
.75 lbs: Vienna Malt
.5 lbs: Wheat Malt
.5 lbs: Belgian Caramunich

Hops:
1.25 oz: Hallertau Mittelfruh 4.1%aa 60min
.75 oz: Hallertau Mittelfruh 4.1%aa 20 min

Yeast:
White Labs German Bock Lager (WLP833)

Target OG: 1.055
Target FG: 1.015
Target IBU: 26

Update 8.13.2009: This one is a big question mark for me. We will see in a few weeks how it turns out. Right now it seems to be slowly fermenting in a fridge, which at 1st I thought it was infected but now I am pretty sure its not. I will know more in a few weeks.

Update 10.4.2009: Oktoberfest is bottled and keged. Should be ready to go in a week or so.

Update 10.21.2009: This is a great beer, which I will do again. I think I will brew it in March and let it lager till September to get a more clear crisp beer. Other than some haze the beer is awesome.
